Decorating Basics Wilton Method Course 1
The Wilton Method® Decorating Basics Course is the perfect place to start! Your Instructor will show you the right way to decorate, step by step, so that you experience the excitement of successfully decorating your first cake.
You’ll understand how to bake a great cake, see how to make and color icing and learn the best way to ice the cake. You will also practice the three fundamentals of decorating, enabling you to approach each technique the right way for great results.
Along the way, you’ll learn to create icing drop flowers, rosettes, shells, pompom flowers, leaves, shaggy mums, and the ribbon rose. You’ll also decorate cookies, cupcakes … and of course cakes!
This is the first course in the series and is the prequisite to take Courses 2 and 3.

How to Register
Flowers and Cake Design Wilton Method Course 2
After completing Decorating Basics, Flowers and Cake Design is one of two additional Wilton Method courses you can choose. In Flowers and Cake Design, you’ll explore sophisticated ways to bring your cakes and desserts to life!
Your Wilton Method Instructor will teach you to create breathtaking icing flowers such as pansies, lilies and the famous Wilton Rose. Then, you’ll discover the secrets of arranging them in a beautifully balanced cake-top bouquet.
Your amazing flowers will be framed by an impressive boarder treatment or basketweave design. With the skills you learn here and your ability to make flowers in advance using gum paste and fondant or royal icing, you can create beautiful blooms at your convenience, ready to place on any cake.

Flowers and Cake Design Wilton Method Course 3
After completing Decorating Basics, Course 3: Gum Paste and Fondant is one of two additional Wilton Method courses you can choose. In Gum Paste and Fondant, you’ll discover one of the most exciting and satisfying ways to decorate a cake.
Your Wilton Method Instructor will lead you every step of the way as you create amazing handshaped flowers, beautiful borders and bold accents using these easy-to-shape icings.
As you learn each technique – an artful bow, mum, rose, carnation, calla lily, rosebud, daisy, and embellished borders – you’ll be closer to your crowning achievement: A Final Course Cake that showcases your skills.

Have you ever wanted to be able to understand your camera manual? Well this class is for you! Digital cameras can be confusing, and we can help! If you do not have a camera yet, advice will be given as to what camera and camera accessories to purchase for the type of photography that you do. In addition to learning how to read your camera manual, you will also have an in-depth look at what makes a great photograph. Students are encouraged to bring their own photographs to help solve what went wrong with your image. And if weather permits, we even take a "field trip" to do some hands on shooting and instruction. This class is open to anyone who has an interest in photography. High school students through grandparents have taken this class. Bring your camera, some note paper, and your love for photography!

How to Register
Water aerobics contributes to cardiovascular development and endurance, strength improvement and endurance, increased flexibility and proper weight management. The class is designed for both swimmers and non-swimmers. Students will participate in aerobic activity, stretching, and relaxation exercises in the pool and will utilize aquatic exercise equipment such as aqua steps, stretch bands, kick boards, buoyancy bars, noodles, and weights.

Introduction to Crocheting (Pot Holders and Dish Cloth)
The Beginning Crochet class teaches familiarity with types of yarn, reading yarn labels, needles and sizes. Basic crochet skills are taught and practiced. The student will learn chain stitch, slip stitch, single, half-double, double, and triple crochet stitches, and how to turn, change yarns, and finish their work. Upon the completion of the course, the student will have created their own pot holder or dish rag.
Supplies needed: 1 Long crochet hook (size 6 or F), 1 Short crochet hook (size J), 4 Skins of cotton thread, 1 pair of scissors, 1 12inch ruler, 1 package of yarn needles.

Poetry Writing Workshop (Level 1)
Goals: Improve overall writing skills through extensive poetry reading and writing.
Objectives:
1) Learn to analyze and explicate works by different poets.
2) Write and revise at least four poems.
3) A weekly workshop (thorough revisions of each student's poems).
Textbook:
The Best American Poetry 2011. Guest Editor: Kevin Young. Series Editor: David Lehman. ISBN: 978-1-4391-8149-2
Class Guidelines:
Students will submit at least one poem each week. Students must make several copies of their work so they can be distributed among other students in the class.
All poems must be typed. There are no rules regarding format, font, length, style, etc.
Note: Poems must demonstrate your ability to employ various poetic techniques. It is acceptable to submit shorter poems. However, keep in mind that you are taking this class to develop your poetry writing skills. Put effort into your work. Remember, your works will be read by others.

American Heart Association Heartsaver® CPR AED is a classroom, DVD-based, instructor-led course that teaches adult CPR and AED use, as well as how to relieve choking on an adult. This course teaches skills which allows instructors to observe the students while practicing, provide feedback and guide the students’ learning of skills. This course is for anyone with limited or no medical training who needs a course completion card in CPR and AED use to meet job, regulatory or other requirements. Upon successful demonstration of skills assessment you will receive a Heartsaver CPR AED course completion card. Prerequisite: none.

How to Register
Learn to dance! This fast paced class incorporates popping, locking, house dancing, krumping, and even some break dancing technique. Class consists of a warm-up, progressions, combinations in the center, and time to work on student's improvisational skills. This class will be divided into 4 styles. Must be at least 5 years old. The adult class will be held on Mondays and Wednesdays. The youth class will be held on Tuesdays and Thursdays.

How to Register
This is an NRA Course. The National Rifle Association (NRA) has been the proven leader in firearms training since 1871. This NRA course teaches the basic knowledge, skills and attitude for owning and operating a pistol safely. This eight-hour course includes both classroom and range time learning to shoot a revolver or semi-automatic pistol.
This course has been designed for the beginner shooter. However, it can also be used as an in depth refresher course for persons who already pose some pistol skills. It is a great course to prepare you to successfully complete the Louisiana Concealed Handgun Application.
*Guns and ammo will be provided at the range.*
Students Will Learn:
NRA's rules for safe gun handling, Applicable Louisiana Law, Pistol parts and operation, Ammunition, Shooting fundamentals, Range rules, Shooting from the bench rest position, Shooting from the two-handed standing position, Cleaning the pistol; and Continued opportunities for skill development.
Students Will Receive:
The "Louisiana State Police Laws and Administrative" handout. Students will take a "Basics of Pistol Shooting" student examination, and will be awarded an NRA course completion certificate upon successful completion.

How to Register

Every other time you apply for your concealed carry permit you'll need a certificate saying you've been updated on the laws and been the range with a certified instructor. We offer re-certification with a two hour class which includes range time and a review of the laws.
